Cooking Up Authentic Panamanian Cuisine

Let me start by introducing myself. My name is Abraham Segovia, I’m 23 years old and I’m Panamanian. I grew up in what is known as “the interior”, in the province of Chiriqui.  This is my first “personal” blog post on the site, and I have to admit that I wasn’t very happy about this whole blogging idea; I even tried to use the Panamanian card to get out of it, but it didn’t work. (Panamanians don’t blog!) Unlike the other interns, I grew up in Panama so I don’t have crazy stories about how crazy driving is here, driving is just driving to me. Because of this I wasn’t sure what I was going to write about, so while thinking about this assignment, I’ve decided I want to talk about something that is fun for me.

I enjoy cooking. I’m no chef, I have no professional training of any kind; I just spent way too much time watching the Food Network Channel when I was in college in Louisville, KY.

Here is my plan:
You should know by now that we are getting local organic products delivered to our door every other Sunday by Culantro Rojo Organics.  I’m planning on taking one item and cooking it in two different authentic ways once a week. I’ll try to make a meal out of it. The food that I’ll be cooking will not be edited. I’m not gonna lie, there is going to be times where I’m just gonna fail completely. So, to keep the transparency theme Kalu Yala aims for, I’m going to ask one of the interns to write a review of each meal. I’ll include their review in my post.

I’m a comfort-food type of guy, and I love my Panamanian food; so don’t expect to see anything extra fancy from me. I still don’t know what I’m cooking for next week, but I’m open to suggestions. Leave me a comment, and if the item is on the basket I promise I’ll do my best to cook it for you.

So far I’ve just made the team Patacones, a traditional plantain dish… because I walked into the kitchen to find Kate butchering one and needed to teach her how to cook it properly.

    I think this is a great way to expose our culture and wonderful food. I am also Panamenian and proud of it…I live in the Mid-west and will be moving to Chicago there is onlu one Panamenian Restruant in the city…so far…would like more people to do something.. need to expose more…..
